Because You Asked Nicely...

I'm not what you call a good cook, those titles belong to our grandmothers or maybe yourself if you like to cook.  I'm just average. Clint wears the best cook hat in our family due to the fact he cooks far better than I do, but Clint can !REALLY! throw down, let me tell ya.  


You know the saying... nobody cooks lasagna better than my mama.  Well, trust me, I don't claim to cook lasagna better than anyone's mama.  Not even close.


But, I do fix mine a bit different.  So far I've only shared with my mother-in-law and my own mom, until now.  Ha, I've been so guarded with them, you'd think I planned on making money with them someday.  Rachel Ray or Paula Dean I am not so I see no reason  to keep any secrets.  In the future I'm going to post recipes that are my favorite.  


If you are a really good cook, please be gracious and just skip this post, because there's nothing I have to bring to your table.  ;o)  For the rest of you, here goes and since you guys on FB asked for the cheesy manicotti recipe I'll start with that one.


I got the original recipe from Kraft Food & Family Ed. Winter 2008 that came in the mail.    All type that is colored white is what I add to make my version of this recipe. That way you can just use the Kraft version if you like OR the "Teroized" version if you like your food to taste good. ;o)


The Kraft recipes are pretty good but what's great about them is they use ingredients you actually have and they make their recipes quick and easy.  Gotta love that!

Cheesy Manicotti
Prep: 40 min. / Total: 1 hour 25 min.
  • 1    pkg. (8 oz) sliced mushrooms ~ I skip this sometimes, if I do use mushrooms I chop them up smaller.
  • 2    cloves garlic, minced ~ 2 Tbsp. Of ready minced garlic (we buy the 32 oz jar of Great Value moist minced garlic, it's wonderful to have on hand for all recipes
  • 3        egg whites
  • 1    pkg. (10 oz.) frozen chopped spinach, thawed, well drained ~ I do not thaw mine, I just steam cook mine. Put frozen spinach in a microwavable bowl covered but slightly vented and microwave for 8 mins.  If you buy the square pkgs. Just tear off the wrapper, put the white box in a bowl and microwave - no need to cover.
  •                                              
  • *1/2 pkg. (4 oz.) Philadelphia cream cheese .  Stir this in with cooked and drained spinach.  Salt lightly to taste.  OR, depending on your taste buds, you might want to try using 1/4 pkg (2 oz.) cream cheese and 4 tbsp (2 oz.) of sour cream. mixed together, then stir into cooked and drained spinach.
  • 1   container (15 oz) part-skim ricotta cheese ~ If you don't like ricotta, you can use 1 container (15 oz) cottage cheese, but this may make it runnier.
  • 1   cup Kraft 2% Milk Shredded Reduced Fat Mozzarella Cheese, divided ~ I use Great Value Finely Shredded Italian Cheese (it's a mix of provolone, ramono, parmesan and mozzarella.
  • 1/3  cup Kraft 100% Grated Parmesan Cheese, divided ~ I buy the Kraft 100% Grated Romano or Grated Parmesan Romano cheese mix OR Parm-Plus.  Parm-Plus is really good b/c the cheese has less fat and it has added seasoning in it but I haven't seen it on the shelves in a while
  • 1   pkg. (8 oz manicotti shells (14 shells) cooked, drained).  I bring 3 quarts of water to a boil, salt the water generously, then add shells and boil for 7-8 minutes, drain and lightly spray with evoo cooking spray on the shells so they don't stick together.  It's very important that you do not overcook your shells!!  If you do not cook them just right, they will tear!!
  • 2     cups spaghetti sauce ~ I usually make my own using 1 14.5-15 oz can of Hunt's regular unsalted tomato sauce, 1 can of tomato paste, and 14.5 oz can of diced tomatoes, Italian seasoning, garlic salt w/ a few extra seasoning to my liking, AND a tbsp. Fleshman's evoo spread  stirred in with sauce and seasoning.  Cook on high then simmer until thick BUT if I don't have time I'll use Chunky Ragu (Sauteed Onion & Garlic) or tweaked Little Caesar's pizza sauce that comes with their Crazy Bread. 
  • * Basil if you like it.  I love Basil so I use a lot.
 PREHEAT oven to 350F.  Spray large nonstick skillet with cooking spray.  Add mushrooms and garlic to skillet; cook 5 min. on medium heat, stirring frequently.  Remove from heat. I mix my garlic straight into my spinach mix and most of the time leave out the mushrooms.  Moist minced garlic tastes horrible if you over heat it (which is easy to do if cooking while trying to keep an eye on your little one)  If I do use mushrooms, then I'll sautee them with garlic in the skillet.  But if you want to leave them out, I say skip the skillet part.  Beat egg whites lightly in medium bowl.  (large enough to hold all ingredient mixtures).  Add mushroom mixture, spinach mixture, ricotta cheese and half each of the mozzarella and Parmesan cheeses; mix well.  Spoon evenly into manicotti shells. ~ I never use a spoon to stuff my shells, I use my fingers.  Sure it's messy, but that way you're less likely to tear the shells.  And it's very easy to tear these shells. 


PLACE in 13x9-inch baking dish sprayed with cooking spray.  Cover with spaghetti sauce.

BAKE 40 min. or until heated through.  Top with the remaining mozzarella and Parmesan cheeses; sprinkle with basil; continue baking 5 mins. or until mozzarella cheese is melted.

Made me Laugh!

Tennessee you have a beautiful state that my family loves to visit over and over... and over! But your football team ~ not a favorite of Alabama's OR Auburn.

And So, It Begins...

My little handsome fellow is already girl crazy. He's such a sucker for pretty women. While shopping the other day, he was running around and stopped right beside a pretty lady checking out clothes on a lower rack. He stopped, hit the floor, rolled over stood up, started making cute faces and talking to her the whole time. Trust me, this is not his usual reaction to people he doesn't know. He usually just stares at them. UNLESS, he's flirting.

Dax repeats this over and over when he's in his swing. After each time he says it, he looks at Clint [waiting for Clint to say Weee] then looks at me waiting to do the same. Then it starts all over again until he finally gets tired of it.

As Giddy As A Kid On Halloween!

Today we went to trade days at Tannehill.  When I was a kid I loved everything Tannehill from the field-trips to the family campouts to seasonal Trade Days; following my mom and Sue Ann (sometimes my Aunt Sheila and/or Maw Maw) all over that park!  And of course... because that's where Clint and I got married.  We drove up to the church and I got a funny glimpse of the future of Dax telling his classmates while on a field trip "my parents got married here"  I can also see the other kids saying "na ah...they did not - Mrs. Teacherwoman,  Dax is telling stories!"  ;o)

Clint loves it just as much as I do.  As soon as we get to the gate, roll down the window and the smell of campfire hits your nose we start getting giddy.  Especially with the weather, falling leaves and all the Halloween decorations.  It's A LOT of fun.

Dax hams it up the whole time we're there too.  Not in the way you'd think, he hung out of the stroller like this with his lips poked out (like a disgruntled old man at a bar) and he was perfectly content just as long as we were moving.  Which is fine with me, I don't like to linger.  Clint on the other hand checks out every last item from every tent except for the jewelry and soap tents.

Pumpkin Patch

Sunday we finally made it to the Pumpkin Patch. We got to hear music, eat sugar/cinnamon covered pecans and play on the moonwalk pumpkin and slide.

Can you believe Clint told me I was to big to get on the slide?  Okay Clint, I know I've gained some weight but considering the enormity of this slide, I think it might hold up.

A Toy That Keeps On Giving

Dax loved his Jumperoo, until he got to the sitting up/crawling stage.  When he lost interest, we loaned it out to a friend for their baby to use to see if he liked it.  When we got it back we put Dax in it to see what his reaction would be.  He didn't like it at all.  So, I took it apart and put it upstairs.  All except for the base.  I left it laying out to see if he'd still play with it since it made cool sounds.  Much to my surprise he does still play with it.  It's really funny to watch.  He'll spin the ball so it'll play the kooky music, he dances to it and when it stops, he spins it again and continues dancing.  It's so funny.

Bye Bye Snug Ride... Hello Pimp Ride!

FINALLY!  Clint and I settled on a car seat that was safe, economical and fits our boy's style.  I held onto the rear facing as long as I could.  Especially since the Graco lasts until 30 lbs.  I actually would have just waited until he was 30 lbs., but, his legs had absolutely no room.


So, out with the infant carrier. [sniff sniff]  It makes me sad and excited at the same time.  Since Dax has passed that 1 yr mark, I now look forward to him growing and becoming more like a little fun person instead of dreading him losing his baby look.  But I still want to get a little choked up.  That is until I realized that this will be the seat that keeps my baby nephew Caleb (sp) safe when he arrives possibly at the end of the month or in November.  This is their 5th child so there's no need in them spending money on one when there is a fairly new car seat at their disposal.

I also knew it was the one because when we went to check them out, this is the one he kept wanting to climb into.  Once in it, he wouldn't get out, I had to make him.  A 14th mos. old willing to be that still that long... oh yeah, this is the one.

Kick-off Tomorrow against the Hogs... Will I be watching?

Probably not. I used to adore football season and never missed an Auburn game. Every weekend brought the opportunity to see something great happen. I've spent time on the edge of my seat watching AU games long before I knew Clint. So marrying an Auburn fan just seemed appropriate. So you would think.

Clint and I love watching the games together, but from separate rooms. Ha ha. I'm a very quite person while watching. Nervous, but quite. Clint is a VERY charismatic fan while watching. He claps his hands [hurts my ears], jumps up and down [FYI - 6'1" 230 lb guy jumping up and down will shake the house, no matter the house or the support], paces... etc. 

So basically, Clint makes me a nervous wreck while watching the games together. Since Dax arrived just in time for football season last year, guess what, I cared a lot less about AU. I still payed attention, but noticed myself staring at him throughout the whole game no matter where we were watching them. After AU lost to Vandy I'd all but given up on them - for the season that is. 

This was in September of '08 watching games at a friends house amongst the frenemies (BAMA fans).  Totally despicable I know! But this pretty much says it all.  I couldn't have cared less about what was going on around me, much less football.  Ha ha.  Not much has changed.

This year since Dax is very mobile I'm missing a lot of the games and seeing most of them in replays. Well, whatever Dax allows me to watch. Unless they are big games, I don't even bother.

Ask me if I care?  no. I suspected this is how it would be and I'm totally fine with that. 

Every Saturday the fun is still there of course. We have our ritual of getting up and starting on the cheese dip and pigs-n-blankets. On days we have company watching with us we cook a pig and pretty much live off of that for the next day or so. The noise in the background is sometimes exciting enough in itself. The most I've watched of a game this year was AU v. West V. The only reason I got to watch it then was b/c we were at Duck and Nicole's and their two children Braden and Kayla (KK) keep Dax preoccupied for some of it. Will I ever get to watch Auburn games by the edge of my seat again. Probably not for a really long time. But that's okay. Clint is fanatical about AU football enough for both of us. Sometimes I think too much. ;o)

Even though I care less and less about football each year, guess what?

That's right - I'll still ONLY wear orange and blue. My stomach still turns when thinking of mistakenly donning a red shirt during football season.   In this household, red is only allowed during off-season Christmas  - I kid you not.  ;o)

Aunts and Uncles make the World go round!

If I'd have had the chance to pick my family, I'd pick the same Aunts and the same Uncles that I have. As happy as Dax is around them I'm pretty sure he feels the same way too. This weekend Dax got to get by his Great Aunt Sheila and Uncle Alan's as well as Great Aunt Sherry and Uncle Merrill. He also got to see Aunt Misty as well. 


Which by the way I'd like to give a big kudos to Misty and let her know how proud the family is of her. She's going back to school to get her Masters as well as become a nurse. As intelligent as Misty is she could have done well in any field she picked. I always thought she'd follow in my dad and brother's footsteps and become an engineer with her impeccable math skills. She's been my human calculator for years. Ha ha, I've always called her while out shopping to ask her how much ___ will be with ___ % off. ;o)


She has a God given talent to work with people more specifically children and teenagers (ministry) so I know that she'll be an excellent nurse when she finishes.

Interesting...

Since I'm just now getting back into the kid's toy grove, I noticed that Holly Hobby had gotten a face lift.  Actually the new Holly Hobbie is the Great-Grand Daughter of the old Holly Hobbie from the late 70's early 80's.  You do the math... ;o)

Got Beta Carotene?

I started to notice that Dax's nose had a yellow or orange tint to it in photos.  He's always had such a pretty complexion, but here lately his nose looks orange.  So, of course, I went straight to the computer and Googled it.  Lots of info came up all pointing to the same thing.  Too much beta carotene.

That makes perfect sense.  Dax refuses to touch greens and his favorite vegetables are (in this order) sweet potatoes, carrots and squash and he has them everyday.  When I first started feeding him solids, he loved green beans and peas.  Not anymore.  Well, he'll still eat the pureed peas and green beans.  But when it comes to trying to feed it to him in it's original form he politely spits it back out.  Or shakes his head and sweetly says "nah nah nah."  Like he's saying "thanks, but no thanks."

By the way let me express the one and only thing Dax has given me a hard time about so far.  Eating!!  Dax is still on pureed food (some I buy - lunch, the rest I just blend up myself), aside from eggs and berries and the rare occasional dish [pizza].   He'll eat any kind of bread in it's usual form; crackers and what not.  But, that's about it except for berries.  It worries me and frustrates me.  The frustration is obvious.  The worry part: I'm afraid of him losing weight if go through the process of how the experts say to correct consistency or refusal of food problem (if they don't eat it, don't feed them anything else or etc.).  I'm having a hard time executing that.


Anyone went through this same thing?  If so, I'd love some tips.  I've heard of food therapy for consistency problems but don't know where to start with that.

My mom says it's payback.  She said I was extremely finicky right up into my teens.

In the meantime I don't know why we spent money on pumpkins for decorations... we could've just dressed Dax in an orange jumpsuit and sat him on a bail of hay because at the moment he's living up to his nic name of pumpkin head.   ;o)

By the way, I'd like to acknowledge the man in the picture (My Uncle Alan; my mom's brother) as the man who single handedly brainwashed my brother and I, who came from an immediate family of UA fans, into becoming AU fans.  And we are so glad he did!!!!  ha ha.  This is a man who was fanatical about AU as Clint maybe more so.  He's wonderful.
